This simple and delicious drink has been a succes everywhere I've served it. And although you'll find every millenial trigger (fresh-brewed, organic, home-made, fresh-pressed) in the ingredient list this pimped iced tea is appreciated by young and old. The recipe is per serving but can also easily be batched and bottled in larger quantities. Shelf life in the fridge is at least five days but once tasted it'll be finished long before that time.
Glass type: Highball
Technique: Build in the glass
Ingredients
160 ml fresh-brewed Chamomile tea (5 minute brew)
30 ml organic apple juice
10 ml home-made orange & honey syrup
5 ml fresh-pressed lemon juice
Tea brewing
Brew the tea (1 gram per 100 ml or 1 teabag per cup) for 5 minutes at 95C
Allow the tea to cool down (outside the fridge)
Orange & honey syrup
Cut julienne strips of the zests of 1/2 orange
Dissolve 300 gram of sugar in 200 ml of warm water (max 60C)
Add the orange zests to the syrup and maccerate for 30 minutes
Strain the zests from the syrup
Add 250 ml of bee's honey and stir
Method
Fill a large glass completely with ice cubes
Add all ingredients and stir
Top up with ice cubes
Garnish with a slice of apple or an apple fan
Sprinkle some loose leaf chamomile on top
