Buckwheat pancakes with egg, ham and cheese
250 g buckwheat flour
25 cl milk
25 cl of water
40 g butter
6 slices of ham
Grated gruyere cheese
Pour the flour into a bowl, break the eggs in the middle of the flour. Whisk everything while adding milk and water as you go. Finish by adding the melted butter. Add a little pepper and salt.
Put it aside for 2 hours before using it.
Heat a pancake pan with the oil. When it is hot, add the pancake batter.
Cook the first side, and turn the pancake. Break the egg over it, add pepper and let the egg lightly become white. Then add the grated gruyère cheese and the slice of ham. Fold down two sides and fold over the other two.
Repeat the operation until all the dough is used.
TIP When ready, you can serve it with a little green salad!
